Chicken Kottu Roti is a tasty spicy dish made of chopped roti or parathas, chicken, egg and lots of aromats. It is quick and easy to make at home, and can be a great way of using leftovers.
You will need: (serves one)
one paratha or rotti (chopped into 1-2 cm pieces)
flesh of one chicken drumstick- chopped into 1-2 cm cubes
5 curry leaves
1/2 teaspoon mustard seeds
one green birds eye chilli – finely sliced
half a medium onion – chopped
1 teaspoon minced ginger
1 tablespoon madras curry powder (optional, can use any spice powder you like)
1 small tomato (chopped into 1/2 cm cubes)
Fresh corriander (chopped)
Add some oil to a non-stick pan. Add mustard seeds and curry leaves, allow to splutter. Add onions and chicken. Stir fry until cooked. Add spice mix and ginger. Fry until fragrant.
Add tomatos and stir until they begin to soften. Season well. Add chopped roti or paratha and stir until heated well. Add one egg and mix in the centre of the pan. Break up with a wooden spoon and mix well into the rest of the ingredients. Add some chopped corriander and serve while hot.
