Spicy Okra


You will need

1 large onion- sliced

2 green chillis-chopped -more or less to taste

2 tablespoons madras curry powder

400 gm okra

1 tablespoon minced ginger

2 large cloves garlic- minced

To make:

Fry off onions in about 1/3cup oil on medium heat until golden. Add garlic, ginger, chilli and spice. Stir fry for a minute or so, or until fragrant. Add the okra and about 1 cup of water. Reduce heat and cook to desired softness. Season well. Add water if necessary while cooking.
