This recipe is absolutely delicious and is made with minimal effort. The spices add a beautiful flavour to this dish without being over the top.
You will need:
500 gms lamb pieces (preferrably on the bone)
Mixed vegtables (approx 1 cup chopped carrots, 1 cup cauliflour and 1/2 cup peas)
1 tsp ground cumin
2 tsp ground corriander
1/4 teaspoon ground tumeric
1 cinnamon stick
2 cups couscous
2 medium onions finely chopped
2 cloves garlic- minced
one tablespoon minced ginger
handful chopped corriander (optional)
handful of sultanas (optional)
Saute onions in oil until almost cooked. Add ginger and garlic and stir for a minute or so. Add the lamb and stir fry until it picks a bit of colour. Add the spices and stir for a minute or two until they become fragrant.
Now you add some water (about 2-3 cups) and allow the lamb to cook until tender. I use a pressure cooker and cook the meat for about 30 mins.
Once cooked to desired tenderness, I like to reduce the liquid to about 1 cup if it is still a bit soupy, adjust seasoning and add vegetables and sultanas. Cook until almost done, add couscous and sufficient water to cook the couscous.
Serve with some lemon wedges on the side and Enjoy!
