The Dough Series: Episode Two

Today the weather was just calling out for another dough experiment, so I decided to make some naan inspired flat breads.

Here is what I used:

3 cups self-raising flour (extra 1/4 cup for kneading)

One cup of warm water

1/4 cup oil

1 teaspoon each salt and sugar

1/2 teaspoon instant yeast

To make:

Mix all ingredients together in a bowl until well combined. Gently knead by adding a little bit of extra flour at a time until you form a smooth elastic dough.

Kneading is very important, so take your time.

Cover the bowl and allow the dough to rise by approximately 30%.

Divide into 4 pieces and shape into round flat breads (approx 1 cm thick). Do not over-work the dough. Just gently shape.  Sprinkle each one with flour as you stack them up so they dont stick. Allow to rise again. (in a warm place this could take 5-10 mins)

When ready to cook, heat a nonstick pan and flatten out the dough a bit more  (to about 0.5 cms). Place in the hot pan and cook on each side for a few minutes until the surface bubbles, then flip over until brown spots form.

You can brush with butter for a glossy finish, or enjoy as is.

I had mine with chicken, pakoras, and some chutney
