Quick spicy chicken drummets

I dont usually eat drummets, but today I decided to use them up as they were taking up too much space in my freezer.

These are really yummy and super easy to make.

You will need:

1 kg chicken drummets (I trimmed some fat off)

Juice of half a small lemon (you can add more if you want more tang)

1 tablespoon galangal (minced). You can also use ginger instead

One large clove of garlic (minced)

A few tablespoons of curry powder (I used Baba’s curry powder which is malay style)

Salt to taste (I used about 1 teaspoon)

One small onion. Finely minced.

Sprinkle of red food colouring (optional)


Mix everything together and bake in a very hot (250 deg) preheated oven until grilled and cooked through. Make sure they are on baking paper and are seperate so they do not stew. Turn around every 5 mins or so.

Serve with some yogurt dip or some fresh salad and bread.
