Banana Loaf

I dont know what happened last week. We bought some bananas and they rapidly turned from a delicious yellow to an off-putting black colour.

I was almost disheartened, until i remembered banana cake! The saviour of old/over-ripe bananas!

This is mainly a special treat for my husband.. but i couldnt resist a slice just for me at a bit past midnight..

What you will need: (this version is low in sugar as I dont like it too sweet)*

Approx 4 medium ripe bananas

2 large eggs

6 tablespoons of honey

1/3 cup brown sugar (can use 2/3 cup if you want it sweeter)

1.5 cups self-raising flour

1 teaspoon ground cinamon

1 teaspoon ground all-spice

1/2 cup oil (can use 125 gm softened unsalted butter)

Zest of one orange (0ptional but adds a nice subtle flavour)

Method:

Mash bananas. Whisk in egg, sugar, oil, spices and honey. Once well combined add flour and fold in well.

Pour mix into a buttered and lined loaf tin. Bake in a pre-heated (180 deg) oven for 30-50 mins or until a knife/skewer comes out clean when you insert it in the middle. Bake in middle shelf of the oven.

Once done, allow to cool. Serve alone or with a drizzle of honey.. or some butter. Whatever takes your fancy!

*I called this  a loaf because it is between a cake and a loaf..  Not too sweet and less fluffy than a cake. For a fluffier/cakier ”cake” the measurements would need to be altered (more sugar andless bananas, approx 2/3 sugar and half the amount of banana and you will need to cream the egg/sugar/oil mix until fluffy before mixing the other ingredients)
