Chicken and Rice.. Oh so nice!

A couple of nights ago I made some spicy rice with yoghurt/spice marinated chicken.

It  is a lot easier to make than it looks.

For the chicken you will need:

250 gms boneless/skinless chicken breast or thigh pieces. Cubed/fat removed

1 tablespoon fresh minced ginger

1/2 tablespoon fresh minced garlic

Approx 5 tablespoons of natural plain yogurt (can use less for a drier mix)

1-2 tablespoons of spice mix. I use Shaan biryani or tikka masla or tandoori masala

a pinch of red food powder (optional)

Juice of half a medium lemon (optional)

salt to taste.

Mix all marinade ingredients and taste for spice and seasoning. These spices come with chilli, so how much you put will influence how spicy the chicken will be. Season to taste.

Mix in chicken and allow to marinate for at least 30 mins.

You can pan fry with some marinade for a wetter result. Or u can remove from the marinade, skewer and bbq or roast in a very hot oven.

I served it with basmati rice which was cooked in chiken stock with a tablespoon of Laziza Sindhi biryani paste. You can use less paste for milder rice. Or u can just add a cople of cloves and cardomom pods for a basic rice.

  1. yum…………… what did you put in the yogurt? and for the rice, you just cook it normally but with the extra spice in it?

    • I normally add a pinch of salt to the yogurt, mint or corriander (chopped) if I have any.

      For the rice, you just add the spice paste, fry off for a minute and then cook rice as you normally would.

  2. This was very delicious and easy to make and was full of flavor. I like it saucey so i added more spice mix with some water. Will definitely make again!
